Title: Garlic Roast Potatoes

Yield: 4 Servings

900gPotatoes, large peeled
50mlOlive oil
120mlLemon juice freshly squeezed
2tsDried oregano
3 Garlic cloves finely chopped
  Salt & Pepper
120mlWater

Preheat oven to 230C. Cut potatoes into quarters or eights lengthwise, place in large shallow ovenproof dish.

Add remaining ingredients and stir potatoes to coat. Bake at top of oven, uncovered for 1 hour or until golden, crip on the outside and soft inside.

Rearrange the potatoes and add more water during the cooking if necessary.
